My Paleo Eating Story/Tips



I have been eating Paleo off and on since January 2012.  I had seen people I know on facebook posting about Paleo, but I was too embarrassed to ask them what it was.   I found lots of websites about it, but my favorite was everydaypaleo.com.  Sarah's story was one I could relate to, and she gives great tips, recipes, and shopping lists!

So, I jumped in ALL THE WAY!  I took her shopping list to the store and bought everything.  My husband had to go Paleo, too, by default.  I was a closeted Paleo eater for a long time because people think you are CRAZY if you don't eat beans, peanuts, bread, and more.  

What is surprising is - there is a LOT you can eat, and it's delicious!  There are complicated recipes out there, but I DO NOT like to cook and am not that good at it. That was my biggest fear with paleo - you have to cook!  There is plenty out there for people like me.

 After about 3 months, not only had I dropped all the weight I wanted - and in a different way than ever before - slimmer at the same weight - BUT, I noticed the numbness and pain I had been having in both arms for YEARS was GONE!!  I don't mean "they feel better".  I mean it was as if I had never had this problem.  Many of my friends and customers had been hearing me complain for so long about how bad my hands and arms hurt, I had to sleep at night on my back with my hands straight down.  I bought wrist braces.  I was up for 2-3 hours at a time at night many times.  In the morning it was hard to do anything with my hands - hold makeup brushes, brush my teeth, and more.  ALL OF THAT WAS GONE!  I felt GREAT!

I went on my yearly incentive trip with Stampin' Up! in May.  To my surprise, I had earned a concierge suite at the Boardwalk Resort in Disney.  Awesome!!  But, they had FREE FOOD!  I slipped some there, but no big deal.  Eventually, though, with trips, work, etc, I have fallen off of the wagon here and there, and lately very bad!  Guess what - they pain is back!  

It's November 2014, and I'm going back FULL PALEO!  I want the pain gone, and some weight loss wouldn't be too bad, either.  

I have read so many stories about the health benefits people have experienced eating Paleo.  I am no medical expert or even a Paleo expert.  But, I know what it did for me.

If you would like to get started, GO FOR IT!!  You will be surprised what you CAN eat and how delicious it is.  There are a TON of resources out there.  Here are some I recommend:

What I usually eat (remember, I like to eat the same thing over and over, don't like to cook, and am NO expert):

Breakfast: 1-2 eggs OR paleo banana bread.  Sometimes fruit

Lunch: Grilled chicken salad for lunch - lots of veggies and homemade vinegar/olive oil dressing.   Sometimes I add raw sunflower seeds.  Or eat leftovers of dinner.

Dinner: I do a crock pot roast with sweet potatoes and other vegetables a lot; crock pot bbq brisket; grilled chicken with bell peppers and onions cooked in olive oil; and I really like this one: fry a package of uncured bacon, set aside, cook ground beef and 1-2 bell peppers (I like red or yellow), a chopped onion. Use lots of seasoning. Chop up bacon and mix in once beef is done. Eat! So good!

Snack: Spoonful of crunch almond butter and one square of dark chocolate.  Or, trail mix: raw almonds, coconut flakes, raisins.

Also, when I did paleo 100%, I DID use full fat whipping cream and splenda sugar blend in 1 cup of coffee a day and it did not seem to hurt me.

For ME, I have pinpointed my sensitivity to wheat and grains.  So, "gluten free" give me pain.  If I eat a slice of pizza, for example, OH THE PAIN that night!!
